Bran Muffins
For regular mornings!
1 cup whole wheat flour
1 1/2 cup wheat bran
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Three ripe bananas , mashed
1/3 cup olive oil
1/3 cup brown sugar
1 egg
1 cup 2% Greek yogurt
3/4 cup chopped prunes
1/2 cup raisins
1/2 cup blueberries (fresh or frozen)
Pre-heat oven to 375F.
Combine all dry ingredients in a medium bowl.
In another bowl, mash bananas and then mix in all the wet ingredients. Add fruit to the banana mixture and then add the dry ingredients and mix until combined.
Spoon batter into muffin cups & bake for 15 minutes or until a knife inserted into muffin come out clean.
Remove from pan and cool on wire rack.
These continue to be a favourite and we often double the recipe.
