Pizza Dough

Add the following to a medium sized mixing bowl,


2 1/4 tsp dry active yeast

1 tbsp sugar

1 1/3 cups or 320 ml warm water. 


Let stand for 5-10 minutes until the yeast floats or foams.

In separate mixing bowl combine,

1 tsp salt

450g flour 

After waiting for the yeast to activate — add, 2 tbs olive oil to the wet mixture. Then, add the dry ingredients to the wet bowl and combine with a spoon. Once the mixture is lightly together, turn onto a floured surface and knead. If you poke a finger, and it bounces back — its ready.

Coat a separate bowl with olive oil and place round dough ball in bowl. Cover with a damp tea towel for 1.5-2 hours.

A fool-proof trick for a cold day:

Turn your oven to 150 degrees farhenieit. Once heat is achieved — turn oven off. Place covered, oven safe bowl on rack and leave the door open for 25 mins. Then close door to trap warm air inside. Just remember to remove bowl prior to preheating the oven for the pizza.

When the dough is ready, roll it out and top it up with your favourites. Here is one of our favourites,

  • Small cooking onion, sliced or diced and then sauteed, reserved

  • Handfull of mushrooms, sliced , sauteed and cooled, excess liquid poured off.

  • 1 Tomato, hearts removed, sliced and salted on a paper towel. Remove as much water as possible.

  • 350g shredded mozzarella cheese

  • 100ml pizza sauce

  • Pepperoni to cover

  • Large handfull of arugula to garnish after the pizza is completely cooked.
